Anyone got recommendations/suggestions for tools taking screenshots and that can also scrape text from the screenshot

The mac will take a snapshot of the screen. Over time it will slowly scrape images and make the results available to Spotlight (mac's search tool). Depending on what you're looking for that might be enough.
